Avocado Black Bean Toast
This is one of those recipes I started making at university when I wanted a healthy and easy lunch that was also filled with protein! The black beans and tomato – cilantro mixture turn your usual avocado toast into a Mexican-inspired filling meal! Personally, I enjoy it best when the bread is nice and toasted.
Ingredients
- 3-4 slices of sourdough any bread
- 1 large avocado
- 1 tbsp lemon juice – or lime
- 1 cup canned black beans – rinsed and drained
- ½ tsp chili powder
- 1 cup cherry tomatoes – finely diced
- ¼ cup fresh cilantro – chopped
- 1 tbsp or more Tahini for drizzling
- salt and pepper to taste
Instructions
- In a small bowl, add the tomatoes, cilantro, black beans and a good pinch of salt. Stir to combine and set aside.
- In a separate bowl, mash the avocado and season with lemon juice, salt and pepper to taste.
- When ready to eat, toast the bread and place them on plates. Add the avocado and bean mix (feel free to top with the black beans or mix it all together). Drizzle with a lot of tahini and enjoy!
