Ratatouille
One of my Dad's favourite dishes to make is the classic french dish, Ratatouille. He makes a delicious one so I wanted to learn how to make it myself! This recipe is a spin on the traditional version, with the veggies cut smaller, and some extra ingredients added in for a kick of umami. It won't disappoint!
Ingredients
- 4 tbsp olive oil extra virgin
- 1 large yellow onion
- 1 large red pepper
- 1 large green pepper
- 1 large courgette
- 2 aubergines
- 1 cup black olives sliced
- 800 g can of tomatoes 2 400g cans
- 1/4 jar "Pimientos del piquillo" optional
- 2-3 tbsp herbs de Provence
- 1 tbsp thyme
- Generous glug of olive oil
- Salt and pepper to taste
- Dash of Tabasco sauce optional
Instructions
- Dice onions
- Chop all veggies into small cubes (see picture)
- Heat pan with olive oil on medium high and sauté onions for 2-3 min.
- Add Herbs de Provence
- Add peppers and cook for 2 min. Then add courgette and aubergine. Let cook for 5-10 min covered on low heat.
- In the meantime blend the tomato can with the “pimientos del piquillo”
- Add tomato and piquillo blend, olives, thyme, salt and pepper & Tabasco
- Cover and cook on low heat for 30 min, or until soft. It should look dark and rich, and smell good!
- Serve with couscous or quinoa, top with nutritional yeast and enjoy!!!
Notes
We like to serve it with fresh bread, brown rice or quinoa. It’s lovely when topped with some nutritional yeast too!
