Carrot Cake

A surprisingly light yet super flavourful carrot cake recipe! The ingredients are mostly wholesome and the cake is sweet without using too much sugar. It comes out moist and fluffy and pairs wonderfully with a cup of tea on a slightly chilly autumn day.

Ingredients
  

Cake

  • 2 cups spelt flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice mix
  • ½ cup olive oil
  • 1 cup oat milk
  • 2 tbsp flaxseed mixed with ⅓ cup water
  • 1/4 cup agave nectar
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar
  • 2 cups grated carrots
  • ½ cup chopped walnuts

Frosting

  • 1 can whipping coconut cream chilled
  • 1 tsp vanilla extract / powder
  • 2 tbsp agave syrup
  • squeeze of lemon

Cake decorations

  • 1/2 cup ground almonds
  • 1 tbsp agave syrup
  • 1/2 tsp turmeric
  • cacao powder for indents
  • Parsely leaves

Instructions
 

Cake

  • Preheat the oven to 180 degrees.
  • In a bowl, add all dry ingredients and mix together
  • Add all wet ingredients (including walnuts) and stir to combine.
  • Transfer the mix to 2 lined cake pans.
  • Place in the oven and cook for 35 minutes, or until you can insert a toothpick and it comes out clean.
  • Make sure to let the cake cool completely before frosting.

Frosting

  • Whisk the coconut milk in a bowl, then add the remaining ingredients and keep whisking until you get a thick consistency. Add more agave / vanilla extract to taste.

Cake decorations

  • In a food processor, mix almond flour, agave syrup and turmeric powder.
  • When the mixture has a dough-like consistency, form into balls and then into carrot shapes. If it is too wet add more almond flour, if its too dry add more agave syrup.
  • Dip a knife in cocoa powder to add the indents on the carrots.
  • Finally add a parsley leaf onto the ends.

Assembly

  • Spread a layer of frosting onto the first cake. Place the second cake on top upside down and layer it with the remaining frosting. Top with carrot decoration and enjoy!

Notes

Keep the cake in the fridge and the frosting will remain thick. We use ‘Terra Sana – Coconut whipping cream’ for the frosting.
