Vegan Sausage Rolls

I'd never tried sausage rolls until I went to the UK, and I had a vegan version. However I found them quite greasy and not very flavorful. But after making my own, I realised they can be delicious and healthy! The walnut and mushroom mixture gives them a rich umami flavour, and using milk instead of eggs to brush over the pastry still gives it that lovely golden colour. Give them a try!

Ingredients
  

  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 red onion chopped
  • 5 cups mushrooms finely chopped
  • 1 tsp oregano
  • 2 tbsp tomato paste
  • 4 tbsp nutritional yeast
  • 2 tbsp soy sauce
  • 1 cup walnuts finely chopped
  • ground black pepper to taste
  • 1 puff pastry sheet vegan, cut in half lengthways
  • sesame seeds for garnish
  • 1 tbsp lemon juice freshly squeezed

Instructions
 

Filling

  • Heat olive oil in a large pan on medium high.
  • Add the onions and garlic and cook until onions are golden.
  • Add the mushrooms to the pan and cook for 5 – 7 min until they are half the size and the liquid has evaporated.
  • Add the soy sauce, walnuts, oregano, tomato paste and nutritional yeast. Reduce the heat to medium low and cook until there is not much liquid left (Just enough to form a paste).
  • Remove from the heat. Taste the mixture and adjust the seasonings to your personal taste, now is a good time to add the lemon juice.

Assembly

  • Preheat your oven to 200 degrees celcius.
  • Roll out your puff pastry on a lightly floured surface (I use a piece of parchment paper). Cut in half lengthways so you end up with two long rectangles.
  • Spoon the mushroom mixture in the centre of the pastry.
  • Lightly moisten the long edge of the pastry, lift one side up over the filling and roll! Brush more milk to seal the edge if needed.
  • Cut them into bite-sized sized pieces, or however long you would like your sausage roll to be!

Baking:

  • Arrange the pieces on the baking sheet.
  • Brush with plant-based milk, sprinkle with a few sesame seeds and bake for approximately 20 minutes, or until golden brown.
  • Serve with a side salad and enjoy!

Notes

We like to serve it with a fresh side salad!
Ps. You can buy a Puff pastry sheet in the fresh or frozen isle of your local grocery store.
