Vegan flan
Flan is a traditional Spanish dessert. When I was younger I used to love the flan my mum made for dessert. It was always the lightest and tastiest, I always looked forward to it! However, after I went vegan I found it was hard to find vegan versions, so I never had it. But after discovering agar agar, I can enjoy the light airy flan my mum used to make all over again! (And it is much easier to prepare as well!)

Caramel
- 1/4 cup water
- 1/3 cup brown sugar
Flan base
- 2 cups oat milk
- 1 tpsb agave syrup
- 1 1/2 tsp vanilla extract
- 1/2 tsp powdered agar agar
Caramel
Combine the water and brown sugar in a small pan and bring to the boil.
Stir to make sure the sugar has dissolved.
Keep stirring for about a minute to evaporate some of the water
Tip out into a bowl and once cooled down, transfer to the fridge.
Flan base
In the same pan you made the caramel, combine the oat milk, agave syrup and vanilla extract and bring to the boil.
Once boiled, remove from the heat and add in the agar agar.
Make sure you dissolve the agar agar in some warm water beforehand so it does not clump up.
Whisk until the agar is completely dissolved.
Tip out into 4 small glass cups and transfer to the fridge to set and chill for about 4 hours.
Once ready, top with the caramel and enjoy!
